Originally from County Tipperary Ireland, my introduction to innkeeping began at an early age where I grew up helping run the family business, a ten-bedroom country inn located in Co Waterford. Here I wore many hats, giving me a broad exposure to all aspects of innkeeping and event planning.

After a successful career as a touring musician, I settled in the USA and have since gone back to my roots in hospitality. Currently residing between Ma and Western North Carolina, I’ve spent the past ten plus years managing local B&Bs where my duties included taking reservations using think reservations software system. I have managed staff schedules along with taking inventory and making sure everything is ready for guests’ arrival including any special requests.

I have culinary skills as a private chef (SERV Safe certified), with a background in health and wellness as a certified yoga instructor, along with hosting cooking demonstrations as a plant/slant chef. Additionally, I have extensive experience planning and running retreats and events such as weddings and private parties. My responsibilities included everything from booking an event space to hiring staff and coming up with a menu that caters to any dietary restrictions along with booking entertainment and making sure everything is running smoothly.

There are many aspects about Innkeeping that I enjoy, but my favorite part of being an Innkeeper is making breakfast! I love coming up with menu ideas that include homemade scones/Irish brown bread from a family recipe with a focus on nutritional variety from local organic sources. I am adept at GF, vegan and vegetarian offerings and feel passionate about offering food that not only tastes good but is good for you.

The Irish are renowned for their warmth and hospitality – I very much embody this stereotype! Greeting guests with a genuine welcome and providing them with an unforgettable experience is empowering and rewarding work for me.
